I have a very difficult time trying to identify the best way to pronounce it. I saw Rachel`s English video about it and couldn’t figure if as a
Brazilian Portuguese speaker, I should say the word “daddy” as [daedi] or as [daeri].
I also saw a video in which the speaker says “Scotty” a ton of times and it
seems to me that when he stresses the word “Schotty” He says [Skodi] but when
it´s not stressed he simply says [Skori].

This is a very interesting topic indeed. I am going to make a video about it and perhaps refer to some of these words that you cited, but for now I would say that you should treat the flap like an r normally, for example [daeri].

The flap t is something between /d/ and /r/( in Brazilian Portuguese like:caro, barato) I'd say that the /d/( in fast Pronunciation), sound like Portugal accent would be better, but both of them are acceptable!
