Já vi esta expressão em alguns filmes e comentários no youtube e não tenho a mínima ideia do que ela possa significar como gíria ou 'idiom'.

Segundo o Oxford Dictionary:
"that's the way the cookie crumbles"
North American - informal
Meaning: That's the way the situation is, and it must be accepted, however undesirable.
E.g.: ‘‘It's so unfair.’ ‘That's the way the cookie crumbles.’’
Em PT-PT, temos uma expressão para isso: "É assim a vida!"

Oi Gunner, Muito legal sua participação com este "idiom" : "that's the way the cookie crumbles" E muito interessante sua contribuição e explicação, Teresa. Só para ilustrar um pouco mais, do site Onelook.com, conforme a fonte, Merrien Webster.com, temos:
"That expression, has an unknown origin. Perhaps it was originated from the 1920's in America. Used to underline a failure of an action, or dissapointment in reaching an undesired result, with the additional meaning that the result was not an unexpected one. Another explanation of "that's the way the cookie crumbles": —used when something bad has happened or to say that someone must accept things the way they are: Example 1: I'm disappointed that I didn't get the job but that's the way the cookie crumbles.
Example 2: I waited in line for two hours to buy the new video game, but by the time I got inside the store, they were sold out. That’s the way the cookie crumbles.
